If you’re looking for an eggcelent treat to spice up your breakfast routine, then you’ve come to the right place! And yes, my puns for this recipe are guaranteed to crack you up.

These “egg muffins” are my go-to for a simple, on-the-go friendly breakfast option (or for any other time throughout the day when hunger strikes). They’re very easy to make, store well in the fridge for up to a week after you make them, and are super customizable to your food preferences. I normally throw spinach, bell peppers, and cheese into mine (see recipe below), but honestly, any combination of veggies + cheese you enjoy and have access to will work!

And on the gentle nutrition side of things, they’re a great source of protein, fats, and fiber. This means they’re not only delicious, but will also help to keep you energized until your next nourishment opportunity. How many of these you choose to eat and what you eat them with will depend on your unique hunger cues, but I often like to recommend eating them with a source of carbohydrates (i.e. toast, a wrap, potatoes…anything, really). This will not only add more energy to the meal, but will likely help you feel more satisfied after eating, too!
